MxMO – Tequila
This months Mixology Monday theme is tequila. Up until a month or so back my only experience of tequila was shots of it, with a lick of salt and a bite of lemon, from when I was at university and doing shots was cool. It’s probably these experiences that put me off trying any Tequila based cocktails for so long, but as it was the only major spirit I didn’t have in my drinks cabinet I decided to bite the bullet and see what all the fuss was about.
As it turns out tequila is actually a really nice spirit. I could have chosen several recipes I’ve been enjoying recently, including the Margarita and Rude Cosmopolitan, and as well as the tentatively titled Oak Alley created by Brad Ellis, which I highly recommend. However, I wanted to use this opportunity to try a new drink, and something that isn’t so well known. A quick search of my recipe books found…
Bald Eagle
- 2 shots tequila
- ¾ shot pink grapefruit juice
- ½ shot cranberry juice
- ¼ shot lemon juice
- ¼ shot lime juice
- ¼ shot sugar syrup
- Shake well with ice, fine strain in to a cocktail glass.
Created in 2001 by Salvatore Calabrese, the drink is rather on the sour side and although I’m not a huge fan of grapefruit it mixes well with the other juices to produce quite a nice flavour. I think next time I make this I will probably up the sugar syrup to ½ or maybe even ¾ shot to ease the sourness. It’s a tasty drink though, and if you like your drinks sour it’s definitely worth a try.

Looks like Calabrese just remixed the Seabreeze, and then resized it.

I suppose it does share a similar list of ingredients, although the Seabreeze has a whole lot more cranberry than this, so they taste rather different!

Looks tasty! Is there a specific style/brand of Tequila you’d recommend?

I used a reposado tequila called Casco Viejo, which I brought because it was pretty cheap and labelled as 100% agave. There’s very little variety in what tequila is generally available here in the UK, short of Jose Cavero silver and gold, so when I found a 100% agave tequila I jumped at it. It’s the only tequila I’ve ever purchased though, so I’ve no idea how it compares to others I’m afraid.

Well. Looks like great drink.
Now I like different fruit salad with tequila and rum, and I will try this…
The mix of lemon juice, lime juice and sugar syrup 1:1:1(-3) work well with rum too. It help to achieve optimal ratio sweet, sour and sharp taste in a drink. This mix work extremely well for example in Fruit Daiquiri (http://www.scienceofdrink.com/top-drink-by-scomorokh/fruit-daiquiri/)

I’ll be honest Scomorokh, I’m not a fan of blended cocktails. I do love a Strawberry Daiquiri though. Making it the non-blended way is a right bitch though – getting the drink through the strainer takes forever due to all the little bits of strawberry pulp!
